Alright all you brilliant gluten-free bakers out there. My little friend Judah is having his first birthday on Saturday. He’s going on an elimination diet to hopefully find out what is bothering his skin, which is going to be very good for him but complicated birthday cakey goodness. Can any of you come up with a cake recipe that doesn’t have gluten or dairy or eggs and probably not coconut or pineapples or anything we aren’t certain about?

Okay. How about this wacky cake? (Compliments of Wacky Grandma.)
Maybe substitute GF flour?
1 cup granulated sugar
1 1/2 cups all-purpose flour
3 tablespoons unsweetened cocoa powder
1 teaspoon baking soda
1 tablespoon vinegar
1 teaspoon vanilla extract
6 tablespoons vegetable oil
1 cup cold water
Sift sugar, flour, cocoa, baking soda, and salt in an ungreased 9″x9″ baking pan. Make 3 holes in the flour mixture. First hole: vinegar. Second hole: vanilla. Third hole: vegetable oil. Pour cold water over all. Stir with fork until all lumps are out. Bake at 350 degrees for 25-30 minutes.
